Speciality Madagascan Vanilla Extracts
The spciality extracts that we sell are a very highly concentrated form of the Purity extracts. They contain no base and are the actual distillates from the innovative carbon dioxide extraction process that is used to extract the flavour from the pods. This process has no by-products because only liquified carbon dioxide is used which evaporates at the end of the process leaving behind only the elements that were present in the vanilla pod in the first place. The extraction process results in 3 layers of extraction, one which is used to make the purity extract, another that is called the 12% extract, and the other the 26% extract.
The 12% and 26% have different properties, but in summary their uses are as for use as food flavouring, in confectionery, in ice creams, cakes, desserts, beverages and liqueurs, for tooth-paste flavouring, for taste improvement of lipsticks, and in perfumery and cosmetics.
The choice of which extract to use is based on the strength, (26% is greater) and also the solubility.

- Ideal for flavouring desserts, cookies, brownies, cakes and panna cottas. Also perfect for hot drinks when steeped using muslin bags.
- Can be used to enhance savoury dishes e.g. in a spice rub, as part of a beurre blanc with lobster.
Seeds
Affordable and natural exhausted seeds, a by-product of extraction, that add texture and the look of real vanilla pod seeds to your recipes.
- Commonly used in ice cream to mimic real vanilla pod seeds as many ice cream machines can only use vanilla extract and not vanilla pods in production.
- A favourite amongst chocolate manufacturers as a way of adding texture to chocolate without using artificial ingredients

The gold standard in natural vanilla: pure seeds hand-scraped from moist pods for maximum potency. Just 1/2g delivers the flavour of a whole pod.
